Here are a couple of dishes that are perfect for a Saturday morning brunch.
1 - Leek Potato Soup
This delicate soup was taught to me by my roommate Nazmy, which has mastered it for quite some time now. The ingredients are:
- Leek
- Onions
- Garlic
- Potatoe
- Salt & Pepper to Taste

Let the leek, onions, garlic, and potato simmer for about 30 mins.

Add salt and pepper to taste, puree the soup, scoop some into a bowl, and add some chopped chives as ascent.
2 - Smoked Salmon Patty Sandwich w/ Guacamole
I sort of made this dish on a whim because friends were coming over last Saturday. It’s a delicious and healthy compliment to the Leek soup. The ingredients are:
- Canned smooked salmon
- Whole wheat sourdough bread
- Greens (anything not too exotic will do)
- Red Bell Peppers
- Chives
- Egg Whites
- Salt & Pepper

Combine egg whites, chopped chives, canned smoked salmon, and salt and pepper in a bowl. The egg whites will help to hold the salmon patties together and provide a nice subtle texture.

Sliced the red bell pepper and pan fry with some olive oil and salt. Then pan fry the salmon patties while at the same time prepare the rest of the sandwich by spreading a moderate amount of guacamole on one side of the bread and topping with some nice spring salad mix (of your choice).

On the other slice of bread, place your salmon patties and position a few roasted red pepper slices on top. Looks nice, no?

And there you have it, easy sandwiches for you and your friends.
