What’s better than mom’s cooking? Grandma’s!! On a recent trip back to Hong Kong, I rediscovered one of my favorite dishes, one that my grandma used to make when I was little.
Ingredients
Pork Chops
Yellow Onions
Brown Sugar
Dark Soy Sauce
Light Soy Sauce
Kosher Salt & Pepper
Extra Virgin Olive Oil
* Note that exact amounts aren’t provided because I don’t really know, I just estimate on everything.
Preparation
Slice up the pork chops into thickness of about 1/4 inches. Use either a meat tenderizing hammer or the back of a kitchen knife to physically tenderize (or pound) the meat. Marinate in a 3:1 mixture of dark soy:regular soy, along with some brown sugar. Marinate for about 30 minutes.
Chop up the onions into slices and set aside until cooking.
Cooking
Grease a cooking pan with a small amount of extra virgin olive oil, and cook the onions with a pitch of kosher salt. After a few minutes when the onions take on a golden color, add in the marinated pork chops and stir-fry until pork chops are completely cooked. Add desired amounts of water for making enough gravy. Adjust taste with salt and pepper. Sever over rice.
